Which Cabbages did you grow at Roots? Sweetheart? Red? They're ready to harvest when they have produced a 'heart' after maturing in the late summer.
When it comes to harvesting cabbage there can be a slight variation in how you do this. You might want to include some thicker, darker leaves for cooking, but sometimes the older leaves might be a little slug-eaten, so you can clear these for compost.
Use a sharp knife to cut the stem under the cabbage heart. You'll be left with a stump. Gently pull the stalk, with minimal disturbance. An open hole in the ground can be treaded back down, firming the soil.
To compost the woody stalk effectively, try cutting lengthways, to speed up the decomposing.
